Protein Shake: Pumpkin (pie)

Hey everyone! So my first challenge that I've set for myself is to make everything from Cooking Light: Quick Baking. I like a lot of the recipes in this magazine because they're sweets in the low calorie range. When I post a recipe from the magazine I'll mention it in the said post.



I'm also going to post recipes from blogs that I follow and write about why I liked said recipe, etc. So now on to my first recipe:

Pumpkin Pie Protein Shake by Linda (Pie in a Glass!)
1 cup light soy milk or 3/4c water and 1/4c fat free half & half (I used 1 cup Vanilla Almond Milk)
1 rounded scoop vanilla protein powder
1/4c pumpkin puree 
1/4c whipped topping, thawed or frozen
2-3 Tbsp Splenda - to taste
1/2tsp pumpkin pie spice (or 1/4 tsp cinnamon, 1/8 tsp each ginger and cloves)
6 Ice cubes



In a blender combine the almond milk, protein powder, pumpkin,  whipped topping, Splenda, spices, and ice cubes. Process until smooth. Serve in a tall glass with a sprinkle of cinnamon on top or whipped cream. Makes one serving - 220 calories. (I filled up an old Odwalla Pumpkin shake bottle).



My thoughts: Well, I like the consistency because it reminds me of Odwalla's pumpkin shake. I like Almond milk so that's what I used; however I think you could use whatever base you'd like such as Oat Milk, Hazelnut Milk, 2% milk, etc. I'm going to re-do this recipe to my preferences because I think it could use more pumpkin as it doesn't taste much like pumpkin pie to me in this version.
